Chicken Soup for the Sickies Soul



A bad case of stomach flu has been sweeping around our house for four days. I have been so lucky as to not get it... yet.Luckily my sister was better for Halloween, but as soon as we got back, my father started vomiting and then my brother. I have been trying desperatley not to get sick, and washing my hands every five seconds. But as we all know chicken soup is the best thing for sickness. It stays down pretty well, and feels nice and soothing on a sore throat. The chicken soup I have here, couldn't be simpler. All you have to do is put scraps of frozen or cold chicken bones in a pot and fill it up with water. That is your broth. Then you must add the spices and things that make it taste yummy! Ginger is always a good soother for nausea and so you must add a bit of raw peeled ginger. Raw carrots, a bay leaf, garlic, parsley and onions always add a little flavor to any old meal, so toss those in with everything else. Also, pepper and salt to taste spices it up. After all these yummy things have been added to the pot simmer/boil on medium heat for one to two hours. After this has been cooked for a good long time, you strain the broth so that all you have is the broth. (the other stuff you won't need anymore) Now you place the broth back on the stove and add your favorite things, such as potatoes or carrots. If you actually want pieces of chicken in your soup you can add shredded chicken and let this simmer. I personally ADORE pasta and noodles so you can add pre-cooked noodles in and take off of the heat after a minute or so... and VOILA! Chicken soup. Snuggle up by the fire, read a book and sip at your delicious homeade chicken soup. Sick or not this soup brightens up any one of my days.
